I admit that I was initially disappointed. When Gustav Wasa closed its doors after sold-out months last New Year's Eve, I was certain that a restaurant of this caliber would find a successor. That did not happen.

When things don’t go as expected, challenges can be seen as obstacles and punishments. Another option is to see them as opportunities to do things differently.
The fantasy of the seven deadly sins has always fascinated me. Not least because I have had to find balance between them myself. The obsession with developing new dishes in the kitchen has demanded a lot, and in recent years I have had to consider what it should cost.

The deadly sins are not just good or evil. They manifest differently in each of us and become relevant again throughout life.
As I pondered this, I realized that the theme touches us all. Gustav Wasa’s cellar remains empty, and for decades I have had a desire to realize an idea in the kitchen. Why not do it now?
